Scott,
in terms of the second part of your question, its really unlikely anyone would "nick" your idea as this is just a small fraction of being in business (ie selling it to the world tends to be the hard bit) but your main routes are a non-disclosure agreement or more formally with a patent if it it s patentable design. Ordinarily the sorts of company that make low volume of one off items will be interested in fabrication, not your product.
Don't lose sight of the fact that once your product is in the shops your design will by definition be public knowledge.
