Looking to setup an event company...

Hey guys,
I'm really keen on setting up my own business, but I have a pretty good job 9-5 and I can't really justify quitting it.
So I thought about an event business - maybe in the line of a cool mobile icecream parlour for weddings and the like. I'm just wondering what people think the takeup might be in the UK. I'm very aware its a seasonal business, but I thought a high class approach with unique flavours might have a suitable niche. I'm a qualified accountant as my day job (perhaps I should be boring and just set up an accounting firm) so I have calculated pretty heavy profit margins on the icecream itself, and as there is not going to be cash transactions at the premises it should be relatively easy to outsource the staffing to events.
Currently I am thinking i'll need £1k for a suitable Ice Cream machine, £1k for the website and a good £3-5k for the associated trappings for the stand itself. I do have access to £7k and its not going to stretch me, but its a big gamble! And I'm risk adverse! Aiee!!
Finally, any ideas on how much a stall at a wedding fair would cost?

Where abouts are you based? I really like your idea and am in a similar position to you myself (pretty good 9-5 but really want my own thing part-time too)...I'm in London, an advertising man by day.

First things that strike me:
1. You could build a really cool, upmarket brand around this
2. You'd need 'groom' type blokes at the wedding fayres selling this to the brides - i'm thinking dermot o' leary with a pot of sailor jerries!
3. Where would you source and store the stock? Is there loads of annoying health and safety legislation?
