I think if you had a strong brand from the outset you could be onto a winner (especially if you set up near me!!)

Cheers for the response guys,
Location would be near a college a big set of council offices and a local landmark (park), its on a main pass through between two towns that is constantly busy and next door to an awar winning fish and chip shop, though it is not in the main town centre.
Our main customer is hopefully college kids who are looking for their sugar rush.
But obviously the savoury would mainly be for the office lot who can have it delivered.
@ tdl123 - where are you located? I will make sure our franchise goes near you.

Confession. I love pancakes! I used to fill them with all sorts of yum-yum fillings from fruit to ice-cream, bananas and jam and cover them in sugar! The only problem was that they put the pounds on.
As I sit using a computer most of the day, I only make pancakes occasionally now, and ceratinly wouldn't make a good customer of yours! Would office workers be like me, I wonder?
Why don't you go into the offices you want to serve and tell the staff manager about your new and exciting business? He or she may even allow you to talk to the staff in their staff room during a lunch hour. I
In that way you would have the best of both worlds. You would introduce your new business and get valuable feedback. An whilst you're at it, why not do the same with the students?

Good idea, all day pancake type place is solid, maybe sell muffins too, as you will get a solid transient crowd comming in and out.

How about 'Holy Crepe'? Haw Haw, on a more serious note there is a crepe shop where I live in Brighton called Crepes & Co. I think it's an independent which always goes down well in Brighton, but it does really well. It's a great idea go for it!

I think its a great idea - I think even though everyone is health concious right now people still want a sweet fix - let us know how you get on. You could do some basic research by making a batch of pancakes and taking them to a few local buisnesses and asking their opinions - see what they would pay for them as well. Good luck!

Superb Idea. Do a google search on La Creperie de Hampstead. They have been going for decades. Day and night they are packed. Especially late at night when most of the local restaurants are closed. Young people leaving the bars and clubs, wanting some great tasting and great smelling food for reasonable prices. The queues take ages but the fans know that it's worth the wait. They literally operate out of 'cart' (although it's permanently located) ( see this photo here: http://farm1.static.flickr.com/12/18729849_59ce1b3212.jpg )
This is great comfort food, and with the right location (lots of foot traffic and hungry people), you'll turn over a fantastic business. I personally think that you should target just the one product - crepes, rather than confuse your marketing message with other goodies like waffles.

Why won't you open this sort of cafe in my country? I live in Belarus, and here we have so few places where we can go to have a snack and relax a bit! I mean we have many restaurants, but all of them are too expensive for an everage cusumer!

I think that while the optimism is great from this forum and will keep the enthusiasm, there is the danger of not having received a proper business critique and nobody has asked more delving questions. Where is your shop going to be? What other food businesses are there in the area? What is the footfall? Is there a demand in that area? What are your P&L projections and cashflow forecasts? I think its a great idea, but you should offer lots of variety just in case, you don't want to have all your eggs in one basket. Expand the menu to draw in more customers.

until you ask your customer what they want! I agree with marketest - ask the students... Get them to fill in a survey about what they want first, have crepes, waffles, etc as an option for a question like "What tasty treat would you like to buy on your way home." If crepes comes up top, you have a market, get the stall going before anyone else does. There was a show on BBC about a young guy in Dorset who set up a stall in the town centre. I think he made it work. You might find it on BBC1 - type in crepe entrepreneur. Good luck.

I love Pancakes. I go to McD's now and then to have their pancake breakfast. Not thye best quality in the world, but still nice.
Do some market research. Seems like a good idea.
I am looking at it a bit like Krispy Kreme. I like their stuff but I have it once in a while because it's so fatty?
