Hello I've just signed up with a web design company that uses templates which is good for my start up but doesn't allow much for design flexibility.
I was wondering if later on I could change to a bespoke website provider but still keep my domain name ...

Which web company have you gone with?
Do you mean a hosting provider that provides webiste templates like 1&1?
I have a client that used 1&1's 'website builder' and I transfered this over to a normal basic hosting package with them for their new bespoke website.

I assume your domain name is a .co.uk?
If is a .co.uk, you can manage this domain through http://www.nominet.co.uk independently of your registrar. You will still have to renew, transfer the name via your registrar, but there are multiple options via the nominet control panel.
Who is yoru web host?

Hi
You can always change the nameserver for your domain at any time. This will divert your domain address to any server you want to host your site on.
