Unless it’s general demographic information there are very few free resources… if you don’t want to pay for information then it might be worth checking the back issues of reputable publications, like The Grocer, FT, Times, Telegraph, The Economist, BBC etc, (all of which will be available online albeit sometimes you can only see a teasing snippet without actually paying for the article).
As naughty as it is if you could always chat up a student with a library card, good university libraries have access to many resources such as the latest Mintel reports etc.

This is very valuable and sensitive information - and I'm not sure it would tell you what you wanted to know even if you got hold of it.
If it's for competitive purposes, your coffee shop/sandwich bar etc. is not theirs. It will have different footfall, different appeal, a different market etc. and unless you are buying into a franchise, you will need to figure all your own marketing, pricing, processes etc and what works for you as a business owner.
I had some guys in a few months ago who wanted to start a green energy company - they had taken the market value of the industry in Scotland from a Mintel report and figured they could get 20% of the market by being cheaper than everyone else. Bumped into one of them last week - he's back employed as a salesman for another company because they just hadn't done their research into how the business would actually work.
Rather than relying on statistics (which as you know, 97% can be twisted to fit what you are wanting to say! LOL!) I'd really look at your business plan.

Thanks for the replies there.
Im off to find me a student haha!. Thanks for the idea Harriet.
I just want to get an idea of how many people get through the door of various establishments to gauge the potential number of people that would see a new advertising medium I am considering launching.
Im not going to need any data on coffee sales or anything like that but thanks for the advice Caroline, Im well aware that 47.672% of statistics are made up on the spot. .

Weirdly - that is what I'd suggest!
Either that or go speak nicely to someone who already offers instore/in mall advertising and ask them what the exposure is. I always take their figures with a large pinch of salt though...
