I'm looking for a peice of software that will allow me to keep track of quotes I've provided to potential clients, as well as invoices I've sent out, payments I've received and also any outgoings the business has.
I want something fairly easy to use. I've got a free trial of something called myob business plus from pc world which I'll try when I get a minute.

Pretty much any of the mainline accounting packages will do this - Sage, Quickbooks and MYOB.
I would suggest you speak to your accountant they should be able to help you select something appropriate for your size of business and also crucially help you set it up correctly so it doesn’t have to be re-hashed later on which can be a real pain. Also helps to use something they are familiar with as you will get better support that way.

Don't know if it meets all your requirements, but there's an open source accounting package which claims to be comparable to Quickbooks, Sage et al:
http://www.turbocashuk.com/
There are also an increasing number of packages working on the ASP model; take http://www.kashflow.co.uk for example.
