I've taken on a new member of staff and they will have access to a lot of confidential information about our busiiness and our customers'.
Is there something like an NDA I should get them to sign?

The standard way is to write a clause into the employees T&Cs of employment. Then you link their contract to the T&Cs so that if they break the clause, you can dismiss them without recourse (not quite that simple, but near enough).

I was more worried about them running off with the data when they leave the company (ie sacking not much use then!)
