I'm currently starting to pull together a business plan for a store selling wholefood products / organic veg / deli items. I understand that one of the key elements of the plan will need to be sales forecasts, but in the abscence of a crystal ball I'm not sure how to arrive at these figures. Does anyone have any advice for how to calculate average spend figures, and how to work out what sort of customer volumes might be realistic ? I would be grateful for any advice, especially from anyone running such a business at the moment. Thanks.
