I have started a small publishing business whilst working full-time in France in another profesion. I don't want my publishing business to fall under the French taxation system as I'll need to pay a fortune in tax and social security even if I don't earn a profit. As such I'm considering setting up a UK Limited Company with a UK registered address.
Am I correct in assuming that the business would then become taxable in the UK?
Are there any other considerations that I'll need to take into account as a UK citizen living in France and running a UK based company?

With something like this there can be a lot to consider which relates to your personal situation.
I'd recommend a chat with Shaun from Tax-Sorted (www.tax-sorted.biz). Shaun lives in France but operates a UK business from there, specialising in tax so he would be in a good position to understand your situation and offer advice.
