Hi people,
Is anyone here familiar with heath & safety issues???
In particular I would like to find out the health and safety regulation on large industrial kitchens like the ones found in pubs, restaurants, schools, colleges etc...
For example what stardard of cleanliness must they be at, how often should the venting ducts be cleaned etc...
Hope someone can shed some light on this issue for me

Hi Matt,
The law on this one is complex as it is made up of Statute and HSE directives. Are intending to open up some sort of commercial kitchen? The cleaning frequency and law on standards is wide ranging and we have a number of clients who retain us just to keep them up to scratch on the law and risk in this area. Try www.healthandsafety-centre.net they provide a number of health and safety advice products including stuff on food hygiene and commercial premises

Lee,
Im not looking to open a kitchem myself but need some info on health & safety from a cleaning perspective.
My friend works in the catering industry as a chef and we are loooking into the posibility of opening an commercial kitchen cleaning company with a specific interest in kitchen ventelation systems and extraction ducktwork.
Really I need to know to what standard they should be kept at, how often a commercial kitchen would need to be cleaned and what specifics are there about ventelation and raction ductwork.
Any advice would help a great deal.

I have found this out for you. For the cleaning of ductwork it depends on the usage. The guide that I have found on enviroment plus is :-
Heavy use 12-16 hrs per day 3 monthly
Moderate use 6-12 hrs per day 6 monthly
Light use 2- 6 hrs per day annually
Cooker hoods and grease filters should be cleaned daily, the former by wiping and the latter by washing (see also your manufacturer's recommendation).

Dear Matt
For issues of food safety, storage, etc, The easisest place to get direct advice is you local city council's environmental health department - they are the ones that actually actively inspect and police this area. You can also get good information from the RIPHH http://www.riphh.org.uk/ who manage many of the official testing and assessment of food handlers, etc.
You might also find professional organisations such as the BHA (www.bha-online.org.uk) and the HCIMA (http://www.hcima.org.uk) which are two leading professional catering and hospitality associations in the UK.

Hi Matt,
All the directives and codes are on the HSE web site but you will also need to be aware of the following statutes ( Acts of Parliament).
Health and Safety at Work Act 1974
Provision and Use of Work Equipment Regulations 1998
Various Electrical regulations ( depending on the age and the extent of your cleaning.
Various food hygiene regs which may affect the use cleaning materials and the operations of cleaning during the 'normal' use of the kitchen.
Your own expertise and competency in cleaning is a requirement in law for anyone you offer this service to, by that I mean they will need to check into your ability and capacity to carry out the cleaning for them. The duty in law for the outcome rests with them even though you are doing the job! So be prepared for those questions.
Also need professional indemnity insurance, public and employer's liability.
This is an area which is governed by a lot of legal regulation, I would suggest that you would need to have access to all of it on a regular basis if you go into this line of work. Let us know if you decide to set up as this sort of business complements our own and there will be a recommended portion on our new web site for advertising these sorts of services. We do the risk assessments on a number of businesses who ask for assistance in this area.
