Hi Dave,
I can't comment on the 1&1 packages I'm afraid but from what I understand they are not *that* customisable without costing extra. I have just designed my store and it's based on the free Oscommerce software. It does take a bit of understanding and patience to work out exactly how it fits together but you can't expect to get a decent, profitable online store up and running in a short timeframe anyway. If you have a modicum of experience with web design you could definitely put something together using oscommerce and tweak it to your liking, saving the money that someone like 1&1 would charge.
If you want any help feel free to drop me an email and I'll try to help where I can.
Cheers,
Chris

As Chris said, 1and1 are great but the eshops are difficult to customise to fit your specific requirements. OSCommerce is good, templates are available and the software is opensource so it's free. We have used oscommerce for our borednolonger.com brand, however it depends on what you will be selling, how you want your shop to look and what is most important for you.
We have our own shop software, and is fully customisable. We have an example of this at www.whispertelecoms.com and also for one of our clients, www.bnaishop.com please feel free to contact me if there is anything i can be of assistance with.

The 1and1 package was commented on in an earlier post:
www.startups.co.uk/Forums/ShowPost.aspx?PostID=132378
this post includes a number of websites that are using the service. Its always useful to see how other websites use the service so you can gauge how flexible it is. You will probably need quite a flexible system, perhaps flexible enough to cope with product options that affect the product price, so do check these features are available before selecting a system.
